The farmer's bread is a strong mixed bread made from wheat and rye flour. It is baked as a round loaf or, more rarely, in a box form. The rustic appearance of the bread is underlined by a cracked crust, which is crispy. You can bake a farmhouse bread yourself in your free time. Children who are interested in food and drink are also welcome to participate.

Here is the basic recipe for a small farmhouse bread:

A good farmer's bread needs only a few ingredients. Make sure that the flour is of good quality. Use darker types of flour such as type 812 wheat flour and type 997 rye flour, which you can replace with spelt flour if desired. A wholemeal portion can also be added.

250 g wheat flour
250 g rye flour
1/2 cube fresh yeast or 1 bag dry yeast
350 ml lukewarm water
1 tsp salt

When using fresh yeast: Measure the water exactly and dissolve the yeast in it.
If you use dry yeast, mix it directly with the flour.

Put the flour and salt in a bowl. Pour on the water and knead the ingredients vigorously with floured hands to form a smooth dough that can be removed from the rim of the bowl. The children will be happy to help you in your free time!
If the dough seems too moist to you, you will need to add some flour. If it is too dry, add some more water.

Cover the bowl with a tea towel and let the dough rise for 30 minutes.

Knead the dough once again briefly and form it into a round loaf, which you then place on a baking tray lined with baking paper. Moisten the surface with some water. The farmhouse bread should now be covered for another 60 minutes.

Before baking, cut the top of the bread crosswise with a sharp knife to make it crispy.

Let the farmhouse bread bake in the preheated oven at 200 degrees top and bottom heat for 50 minutes. The finished bread can cool down on a cake rack.

Spicy farmhouse bread with pre-dough:

This bread tastes even more aromatic because it is made by adding sourdough and bread spice.
250 g rye flour
250 g wheat flour
1/2 bag of bread spice
1/2 bag of sourdough
1/2 cube fresh yeast or 1 bag dry yeast
350 ml lukewarm water
1 teaspoon sugar
1 tsp salt
1st step
For the pre-dough put the salt, sugar and yeast in a bowl. Add the warm water and half the wheat flour.

2nd step
This liquid pre-dough must rest for 30 minutes. It will form bubbles.

3rd step
Add the remaining ingredients and knead the mixture into a dough that is not too sticky and not too dry. It may be necessary to add a little flour or water.

Step 4

Leave the bread dough covered to rest for 1 hour in a warm place.

Step 5
Knead the dough again briefly, bring it into the desired shape and place it on a baking tray lined with baking paper.

Step 6
Dust the surface of the bread with flour and let it rise for another 15 minutes.

Step 7

The farmhouse bread is baked at 200 degrees top and bottom heat in a preheated oven for 50 minutes.
